The Menapian pre-cooked côte à l'os represents an exclusive piece of our heritage: the Menapian pig, which already populated the region between the Coast and the Scheldt 2000 years ago. This breed, praised by the Romans as a culinary treasure, is brought to life by us with care and precision in our contemporary cuisine.
The meat is first brined with a combination of nitrite and nutritive salt, which contributes to preservation and depth of flavor.
After brining, the meat is slowly cooked, a process that promotes the juiciness and tenderness of the meat.
The end result is a beautifully pink, perfectly cooked côte à l'os.
BBQ tip!
We recommend grilling the Menapii côte à l'os briefly, on a well-heated grill without direct flames. This will give the meat a crispy exterior, while keeping it juicy and rare on the inside. A finishing touch of coarse salt will enhance the deep flavours, and a short rest period before serving will ensure the ideal taste experience.
For 2,000 years it seems the Menapian pig Gone forever. Until historical writings and the discovery of untouched bones sparked the interest of a few passionate pig lovers. After years of crossbreeding, nutritional experiments and scientific research Together with UGent, Ruben Brabant and Hendrik Dierendonck are reviving the breed.
