The Lomo de Bellota is the matured pork tenderloin of a purebred Iberico pig.
The pigs live partly freely in nature (Delhesa) where they are fed a natural diet of acorns (Bellota) and wild grasses.
The intermuscular fat in the pork tenderloin provides a tasty and tender flavour.
The pork tenderloin is salted and rubbed with a mixture of herbs. Then it is air-dried for 3 months.
Packed per 80 grams.
