Our capons come from Tradition de Coteaux in Gascony, in south-east France. The Gascon capon is an ancient breed that is enjoying a renaissance. It lives outdoors from spring onwards and is fed maize and milk, among other things, to give its meat flavour.
As well as living outdoors, the Chapon Bastide has also acquired a tender flavour from drinking milk and eating maize. It is the largest breed of capon to come from the Coteaux Tradition.

Available only during the festive season, with delivery on 21 and 23 December (order until 15 December, 10pm) and 28 and 30 December (order until 22 December, 10pm).
