Our capons come from Tradition de Coteaux in Gascony, in south-eastern France. The Gascon capon is an ancient breed experiencing a renaissance. It lives outside from spring onwards and is fed corn and milk, among other things, to give its meat flavour.
The Chapon Tradition is descended from the free-range chicken from the Gers. It is slightly less fatty than other capons and delicious. Like other capons, it is wrapped in cloth to redistribute the fat a little and allow it to soak into the meat. This makes it taste very tender in the mouth. A real feast.
Perfect for 5 to 6 people.
Only available during the holidays, with delivery on 21 and 23 December (order until 15 December, 10pm) and 28 and 30 December (order until 22 December, 10pm).
