Cooking tip:

  • Preheat the oven to 200ºC.
  • Pan sear and then allow to cook in a pot with a lid, either on the stove or in the oven at 180°C.

To prevent the meat from drying out, baste regularly with its own roasting juices.You may want to add a Petit Suisse cheese or some cream.
